Rabo de Ovelha is a natural hybrid of the Cayetana blanca variety and an unknown variety. The variety is mid-late, characterized by high yield and sensitivity to drought. It is susceptible to powdery mildew and grey mold, while being resistant to coulure.
Morphologically, the variety is characterized by medium-sized cylindro-conical clusters and small, round, white berries with thin skin and a thick waxy bloom. The name translates as "sheep's tail," which refers to the shape of the clusters.
Wines from this variety possess good acidity, aging potential, and a restrained fruity aroma with floral, vegetable, and mineral notes. Due to its ability to accumulate alcohol, the variety is often used in blends to provide structure to wines.
