The acidity of citrus fruits is determined by the titratable concentration of citric acid in the juice. This is a key quality indicator that determines flavor, harvest timing, and fruit shelf life.

In citrus cultivation, titratable acidity, expressed as a percentage of citric acid per volume or mass of juice, is used to assess fruit quality. Acidity levels vary significantly by species: lemons typically range from 3.5% to 8.1%, while oranges and mandarins range from 0.6–2.0% and 0.9–1.2%, respectively.

The acidity index is dynamic and decreases as the fruit matures, concurrent with sugar accumulation. To determine ripeness, the sugar-acid ratio is used, representing the proportion of sugar content to titratable acidity; its optimal values generally fall within the 12–30 range. High acidity also contributes to better fruit storage by inhibiting the development of certain pathogens.
