Instrumental analysis is used to evaluate citrus flavor: measuring sugar content (°Brix) using a refractometer and determining citric acid content by titration. The key indicator of balance is the sugar-acid ratio, for which optimal values for many species (oranges, mandarins) range from 12 to 30. The aromatic profile is determined by gas-liquid chromatography to identify the composition of terpenes, aldehydes, and esters, including important compounds such as valencene and nootkatone.

Monitoring the sugar-acid ratio is the primary criterion for determining harvest timing, as citrus fruits often do not ripen post-harvest. Agrotechnical practices significantly influence the formation of flavor and aroma qualities, particularly the mineral nutrition system: excessive nitrogen application can lead to a decrease in the ratio, while potassium affects acidity levels. Breeding efforts for the crop are aimed at stabilizing this balance and maintaining the intensity of volatile compounds under various climatic conditions.
