The processing suitability of hulless oats is due to the absence of tight adhesion between the caryopsis and the floral glumes, which eliminates the dehulling stage. This increases product yield and preserves the biological value of the grain during the production of food ingredients.

A biological characteristic of hulless oats is their minimal husk content, ranging from 0.5 to 0.9% of the grain mass, which radically simplifies the processing workflow. Since there is no need for the mechanical removal of husks typical of traditional varieties, it is possible to better preserve the integrity of the germ and outer layers, which contain proteins, lipids, and beta-glucans.

In deep processing, hulless oats serve as promising raw material for starch production. The yield of coarse-grained 'A'-type starch during enzymatic pulp treatment reaches 51.4–53.9%, while the yield of fiber remains low (7.3–8.8% DM). The absence of pubescence on the kernel surface also eliminates the need for additional operations to improve taste, making the crop preferable for infant and dietary nutrition.
