The technological potential of soft wheat grain is determined by its ability to form a high-quality gluten complex from gliadin and glutenin proteins, which ensures baking properties.

Soft wheat is distinguished from durum wheat by a less hard endosperm, which allows for finer flour production, as well as specific gluten characteristics. These features make soft wheat the primary raw material for the baking industry, unlike pasta production, which requires raw materials with different protein properties.
