The variety has ancient origins in the Monferrato hills. The name is derived from a dialect word meaning "many seeds," as the berries contain 3–4 seeds. The plant has medium vigor and semi-erect shoots. The variety is characterized by uneven ripening of berries within the cluster.

The variety is demanding in terms of conditions and is sensitive to powdery mildew, grey mold, and a tendency for flower abscission. It develops best on poor, well-drained calcareous or sandy soils. Yield is average and variable.

Grignolino N. is intended exclusively for the production of red wines. Due to the high seed content, it requires delicate pressing to prevent excessive bitterness. The resulting wines have high acidity, pronounced tannins, and a light ruby hue.
