Fruit acidity — Sour cherry

Prunus cerasus L.

Fruit acidity in sour cherry is a cultivar-specific indicator of organic acid content that determines the flavor and technological suitability of the harvest. L-malic acid predominates in the fruit, and the content of titratable acids usually ranges from 0.7 to 1.9%.

Determination of fruit acidity in cherries is carried out by the titrimetric method, with results expressed in grams of citric acid per 100 g of fresh weight or in Turner degrees. An acidity level of 0.8–1.2% is considered low and preferred for fresh consumption, while values above 1.5–1.8% are classified as high and are recommended for industrial processing.

A key indicator of a cultivar's taste quality is the sugar-acid index, which represents the ratio of sugar content to titratable acidity. This biochemical trait is determined by the cultivar's genetics and is only slightly modified by growing conditions and mineral nutrition systems.
