The variety, also known as Leucolea or white olive, is a rare historical species characteristic of the vicinity of the commune of Saracena. Unlike most olive varieties, whose fruits darken, the fruits of Bianca di Saracena retain a light ivory shade even after ripening.
In the 20th century, the variety practically disappeared from general circulation, surviving only as isolated specimens. Oil from these olives was historically used in religious rites, which is linked to the trees' long-standing presence in the gardens of ancient monasteries.
