Pear processing technologies are focused on preserving the texture and aroma of the fruits. The main methods are canning in syrup, making purees and jams, and drying, while pickling is not used as a preservation method.

The optimal stage for processing pear fruits is considered to be technical maturity, which maintains a firm flesh structure that prevents the fruit from falling apart during heat treatment. To prevent the darkening of peeled flesh caused by oxidative processes upon contact with air, soaking in solutions with the addition of citric acid is used.
The choice of processing method is influenced by the structural characteristics of the varieties, in particular the presence of stone cells. Varieties with a high content of these are preferably used for the production of juices, purees, or fruit butters. The use of acetic or citric acid for preparing pickled pears is not technologically considered pickling.
