Vitreousness

Vitreousness is an indicator of wheat grain endosperm consistency, reflecting the density of the bond between starch granules and protein. It is a key quality trait that determines the grain grade and its technological properties during processing.

Vitreousness reflects the structure of the grain endosperm and is manifested in its appearance when viewed against light. Vitreous grains are characterized by high density, transparency, and a glossy fracture, which indicates a strong bond between starch and protein. In contrast, mealy grains have a matte, loose structure and a white color due to the weak bond between these components.

This indicator depends on the genetic characteristics of the variety, as well as on growing conditions and applied agricultural practices. Hot, dry weather during the grain-filling period and a short growing season contribute to an increase in vitreousness, whereas, for example, an excess of phosphorus during fertilization can reduce it.

The evaluation of vitreousness is expressed as a percentage and is carried out visually, by the diaphanoscopy method, or using optical-computer diagnostics. Grain lots are classified as low-vitreous, medium-vitreous, or high-vitreous based on the percentage content of vitreous and partially vitreous grains.
