The organoleptic assessment of the flavor and aroma profile of grapes is a key stage in variety testing and breeding, determining varietal typicality and harvest timing.

For table grape varieties, a 10-point system is applied, within which the taste and aroma of the berries are evaluated on a scale from 1.0 to 5.0 points. The tasting evaluation includes an analysis of the intensity of muscat or other varietal nuances, the harmony between sugar content and acidity, as well as the textural characteristics of the pulp and skin.

Although the evaluation is conducted by expert tasters, it correlates with physicochemical indicators: sugar content (degrees Brix) and titratable acidity. In scientific research, gas chromatography-mass spectrometry methods are used to identify the profile, allowing for the detection of key compounds, such as terpenes and esters, that define the uniqueness of a specific variety.
