The chemical composition is characterized by a high dry matter content ranging from 9.1 to 26.3%, which is critical for the quality of pectin-based products such as jams and fruit butters.

Technological assessment includes flesh consistency suitable for pureeing and the preservation of the aroma-forming complex during heat treatment. An important feature of the crop is the requirement to harvest only mature fruits, as unripe specimens retain a bitter taste that is not eliminated during processing. The biochemical composition, with its high carotene content, requires gentle temperature regimes to preserve color and biological value.

A specific aspect of apricot processing is the possibility of using the kernels for the production of fatty oil or food products. This expands the concept of variety suitability, shifting the pit from the category of waste to the status of technologically significant raw material.
