Sweetness of sweet cherry

An indicator of sweet cherry fruit quality reflecting the concentration of soluble solids and sugars. It is a key criterion for determining optimal harvest dates and the consumer value of a variety.

To determine the sweetness of sweet cherry fruits, the refractometric method is predominantly used, with results expressed as a percentage on the Brix scale. Typical sugar content in the fruits varies in the range of 10–15%, while the concentration of soluble solids usually ranges from 13.9% to 20%. Varieties demonstrating values of 14.5–15.2% and higher are considered the most promising for breeding.

The process of sugar accumulation directly depends on light conditions, which determine the intensity of photosynthesis, and mineral nutrition: potassium and phosphorus contribute to improved synthesis and transport of sugars into the fruits. During the ripening period, sweetness acts as an indicator of maturity, as its increase is accompanied by a decrease in acidity. Excessive moisture during this period can lead to an undesirable reduction in sugar concentration.
