Sweet chestnut fruits contain 40–64% water and a significant amount of starch, with low fat levels, which gives them a characteristic soft texture similar to that of a potato. Unlike typical nut crops, they are more often considered a starchy product whose culinary value is more fully realized after heat treatment.
Fresh chestnuts have a short shelf life and quickly lose their taste qualities and dry out after harvest. To reduce tannin content, it is recommended to store the fruits for several days after harvesting; however, due to the risk of confusing the edible sweet chestnut with the toxic horse chestnut, it is necessary to strictly distinguish between these plant species.
