The most common method of grapevine budding is chip budding, which allows operations to be performed without removing foliage or dormant buds, thereby minimizing plant physiological stress. This technique is less dependent on sap flow (bleeding), ensuring reliable tissue union even during dry periods. The viticulturist can vary the timing of the procedure, choosing between prompting bud burst in the current season or keeping it dormant until the following spring.
Unlike fruit crops, the primary driver for large-scale grapevine grafting is the phylloxera resistance of the rootstocks. The success of these operations is strictly limited by the affinity between scion and rootstock, which restricts the use of interspecific combinations. The high growth intensity of the grapevine requires specific post-operative care, including the mandatory removal of rootstock suckers to prevent suppression of the scion, as well as tying up the developing shoots.
The practice of "green grafting," including "hardwood-to-green" and "green-to-green" methods, is a unique agrotechnical tool that allows for the adjustment of varietal composition or vine training directly during the active growing season. In viticulture, budding and grafting transcend the category of standard propagation methods and become a tool for the operational management of vine development in the vineyard.
